Pan-fried sole fillets with parsley and garlic

    Dinner doesn't get easier than this! A fabulously simple and delicious way to prepare sole. At our house, we love sole, but it is not always affordable - I use the same method for cod.

    Serves: 4 

    • 2 tablespoons butter
    • 3 garlic cloves, minced
    • 4 sole fillets
    • salt and ground black pepper
    • 15g parsley, chopped

    1. Heat the butter in a frying pan over medium high heat, and cook and stir the garlic until fragrant but not browned, about 1 minute.
    2. Season the sole fillets with salt and pepper, and sear in the frying pan for 2 minutes on each side. They should be quite browned.
    3. Sprinkle with the parsley, reduce the heat, cover and cook until the fish flakes easily with a fork, about 7 minutes.

    Serving suggestion

    Serve immediately with boiled potatoes and oven-grilled vegetables or a green salad.

    I made this two weeks ago but used megrim (which is part of the sole family).I did it exactly as the recipe stated and served it with minted new potatoes and steamed broccoli.Brilliant!  -  06 Jul 2015
