About this recipe: This pasta salad is easy to make and is great alongside a variety of different meals, especially summer barbecues and picnics.


Serves: 6 

  • 120g wholewheat fusilli pasta
  • 200g broad beans, cooked and shelled
  • 10 cherry tomatoes, quartered
  • 3 mushrooms, chopped
  • 1 head iceberg lettuce, torn into pieces
  • salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 clove garlic, minced

  1. Bring a large saucepan of salted water to the boil and add the pasta. Cook for 15 to 20 minutes or as instructed on the packet. Cook until al dente then drain and set aside.
  2. In a mixing bowl combine the pasta, broad beans, tomatoes, mushrooms and lettuce. Season with salt and pepper and gently toss.
  3. In a small bowl, mix the olive and garlic and pour over the salad and serve.
