Makes: 250 g of butter
750ml double cream
1 tablespoon fleur de sel or Maldon® sea salt flakes

Pour cream and salt in a blender.
Mix at low speed for about 10 minutes; the mixture will thicken and beaters will start to make 'tracks'.
Prepare a butter mould or any dish you have to hand.
Continue to mix another 20 minutes; after 30 minutes the mixture will start to be a bit grainy.
Mixture will start to amalgamate; stop the mixer when large pieces are formed (you will then have butter and buttermilk).
Compress butter into mould and let drain.
Unmould butter, wrap in greaseproof paper and refrigerate.
Use remaining buttermilk for other cooking and baking!
