About this recipe: Financiers are small French teacakes made ​​from egg whites and ground almonds. These are embellished with everyone's favourite chocolate-hazelnut spread. They are delicious, perfect light treats for afternoon tea. There's a theory that these cakes are named 'financiers' because they became popular in the financial district of Paris, and the moulds they're usually baked in are the shape of gold bricks!


Serves: 6 

  • 3 tablespoons plain flour
  • 3 tablespoons ground almonds
  • 130g icing sugar
  • 1 pinch baking powder
  • 4 egg whites
  • 70g butter
  • 6 teaspoons Nutella®
  • 6 pinches slivered almonds

  1. Preheat oven to 200 C / Gas 6 and lightly butter 6 financier moulds or mini tart tins.
  2. In a medium bowl combine flour with ground almonds, sugar and baking powder. Add egg whites and whisk well.
  3. Melt butter in a small pan over low heat and add to egg mixture; mix well. Distribute 1/3 of mixture into prepared moulds and add 1 teaspoon Nutella® in the centre of each. Top with remaining mixture and sprinkle with slivered almonds.
  4. Bake in preheated oven for 10 to 15 minutes.


If you don't have a financier mould, you can use mini tart tins or cupcake cases. Watch baking time as it may vary depending on the size of mould used. Financier moulds are available online and in some speciality shops.
