Cheats Scottish Empire biscuits

    Typically Empire biscuits have one sugar-coated jelly sweet in the middle, but I put on the little silver pearls to make them more exciting for my kids! No baking is involved, so they are incredibly easy to make!

    Makes: 12 biscuits

    • 24 rich tea biscuits
    • 6 tablespoons strawberry jam
    • 110g (4 oz) icing sugar
    • silver pearls, for decoration

    Prep:25min  ›  Extra time:30min  ›  Ready in:55min 

    1. Place at least half a teaspoon of jam onto 12 of the biscuits and spread it evenly.
    2. Top each jam-topped biscuit with the remaining biscuits.
    3. Make up the icing according to packet instructions, but you want it to be relatively thick to coat the biscuits.
    4. Ice the biscuits, then top with the silver balls. Leave to dry for about 30 minutes.

    We used to make these with Royal Scot biscuits - which were more like the texture of the original German or Empire biscuits. Unfortunately Royal Scot are no linger available. Abernethy would work too.  -  07 Nov 2016
