About this recipe: Dandelion greens are slightly bitter, similar in flavour to rocket. They're also super healthy and can be foraged if you're sure the grounds haven't been sprayed. Quick to prepare, this salad brings springtime to your plate.


Serves: 4 

  • 120g dandelion greens
  • 12 cherry tomatoes, halved
  • 2 tablespoons chopped pine nuts
  • 2 tablespoons rapeseed or olive oil
  • 1 tablespoon balsamic vinegar
  • salt and freshly ground black pepper to taste

  1. Trim greens to get rid of any tough stems. Rinse and put the greens in the basket of a salad spinner and spin dry.
  2. Put dandelion greens in salad bowl with tomato halves and pine nuts. In small bowl mix oil with vinegar, pour over salad and toss. Season and serve immediately.


You can easily substitute dandelion greens with rocket, ready in the bag from the supermarket - just as yummy!
