Chocolate and raspberry lava cakes

    A scrumptious, top-notch dessert for a special occasion! The melted chocolate and raspberry jam should flow out when your spoon cuts into the dessert. A beautiful treat!

    Serves: 6 

    • 175g plain chocolate (70% cocoa solids), divided
    • 125g butter
    • 4 eggs
    • 6 tablespoons caster sugar
    • 4 tablespoons plain flour
    • 6 teaspoons raspberry jam
    • butter for greasing

    1. Preheat oven to 200 C / Gas 6. Line 6 ramekins with lightly buttered foil.
    2. Melt 120g dark chocolate and 125g butter in a double boiler. Set melted chocolate mixture aside to cool.
    3. Whisk eggs with caster sugar in a medium bowl; add flour and cooled chocolate mixture; mix gently until combined.
    4. Place 2 squares of chocolate and 1 teaspoon of raspberry jam in the bottom of each ramekin; spoon cake mixture on top until ramekin is 3/4 full.
    5. Bake in preheated oven for 8 to 10 minutes (until top of cake looks just cooked and no more). Let cool about 1 minute and turn out onto dessert plates.
