380g green or red lentils
3 allspice berries
2 bay leaves
2 tablespoons olive oil
300g smoked bacon, diced
1 onion, chopped
2 cloves garlic, minced
1/2 packet frozen mixed vegetables
1 tin chopped tomatoes
salt and pepper, to taste
1/2 teaspoon marjoram
1/2 teaspoon cumin
1/2 teaspoon paprika

Rinse the lentils in a sieve under running water. Transfer to a stockpot and cover with water. Add the allspice berries and bay leaves then simmer for 30 minutes until tender. Top up the water if necessary.
In the meantime, heat the oil in a frying pan and brown the bacon. Remove and set aside. Add the onion, garlic and frozen vegetables and cook until softened.
Transfer the vegetables to the pot with cooked lentils. Stir in tomatoes and bacon. Season with herbs and spices and simmer for 10 minutes until the flavours are well developed.
