Passover orange cake

    This is an Israeli recipe for a gluten free and dairy free orange cake. It is traditionally baked for Passover but you why not take advantage of good oranges and make it any time in the winter?

    • 2 unwaxed oranges, scrubbed well under running water
    • 6 eggs
    • 250g caster sugar
    • 250g ground almonds
    • 2 to 3 drops almond extract

    1. Place oranges in a saucepan and cover with water. Bring to the boil, then reduce heat and simmer, covered, for 2 hours. Let cool and drain. Mash oranges with a fork or puree in the food processor/blender.
    2. Preheat oven to 150 C / Gas 2. Line a cake tin with greaseproof paper.
    3. Beat eggs till foamy, then gradually add sugar and beat till light in colour and fluffy. Add almonds, orange puree and almond extract. Beat well to combine.
    4. Tip mixture into the prepared cake tin and bake till a knife comes out clean, 50 to 60 minutes. Remove from the tin and let cool on a wire rack.


    Serve the cake with vanilla custard.
