I like to make these muffins because usually I have the ingredients to hand, and they're perfect to take on a picnic or for lunch in the office. I make them often for a starter for dinner, too.

Makes: 1 dozen
200g plain flour
2 teaspoons baking powder
3 eggs, lightly beaten
1/2 teaspoon salt
1 pinch ground black pepper
100ml olive oil
1 (200g) jar pitted black olives, drained
1 (200g) tin tuna, drained
100g grated Parmesan cheese

Preheat the oven to 180 C / Gas 4. Butter a 12-cup muffin tin.
Combine the flour and baking powder, then whisk in the eggs, salt and pepper. Combine well, then stir in the milk and oil, then the olives, tuna and grated cheese. Fill the prepared muffin moulds 2/3 full.
Bake in the preheated oven until a skewer inserted near the centre comes out clean, about 30 minutes. Cool in the tin for 5 minutes, then turn out to cool completely.
