Vegan sweet potato peanut soup

    This is a rich velvety vegan soup with sweet potato and peanut butter.

    Serves: 6 

    • olive oil
    • 1 large onion, minced
    • 3 garlic cloves, minced
    • 30g fresh root ginger, peeled and minced
    • 1 sweet potato, peeled and diced
    • 1L water
    • 300g creamy peanut butter
    • 5 tablespoons tomato puree
    • 1 lime, juiced
    • salt
    • crushed chilli flakes
    • 30g fresh coriander leaves
    • 1 handful peanuts, chopped

    1. Heat a little olive oil in a pot over medium hat. Add onion, garlic, and ginger and fry till soft, 5 to 10 minutes.
    2. Add sweet potato and water and bring to the boil over high heat, then reduce heat and simmer till the sweet potato is soft, about 20 minutes.
    3. Add peanut butter and tomato puree and puree with an immersion blender. Add lime juice, salt and crushed chilli to taste.
    4. Ladle soup into soup bowls and garnish with coriander leaves and chopped peanuts.
