1/2 (411g) tin apricots in fruit juice
4 chicken thighs
1 small onion, minced
salt and pepper
Method Prep:20min › Cook:30min › Ready in:50min
Preheat oven to 180 C / Gas 4. Drain apricots and reserve syrup. Place a layer of apricots on the bottom of baking dish and add the chicken thighs on top. Cover with the onion and the remaining apricots and drizzle with a little syrup.
Bake in the preheated oven for 75 minutes, drizzling with a little syrup every so often. Serve with pasta.
