Chicken thighs with apricots

    • 1/2 (411g) tin apricots in fruit juice
    • 4 chicken thighs
    • 1 small onion, minced
    • salt and pepper

    1. Preheat oven to 180 C / Gas 4. Drain apricots and reserve syrup. Place a layer of apricots on the bottom of baking dish and add the chicken thighs on top. Cover with the onion and the remaining apricots and drizzle with a little syrup.
    2. Bake in the preheated oven for 75 minutes, drizzling with a little syrup every so often. Serve with pasta.
