Lamb and veg casserole in the pressure cooker

    This recipe for lamb casserole is delicious but also very simple to do. You can vary this dish by changing the vegetables to simmer with the lamb, according to your preferences.

    • 4 lamb shanks
    • 2 onions, chopped
    • 3 carrots, sliced
    • 3 sticks celery
    • 1 turnip, sliced
    • salt and freshly ground black pepper to taste
    • 1 teaspoon mustard
    • 1 pinch nutmeg
    • 1 pinch dill
    • 1 pinch thyme
    • 1 pinch rosemary
    • 2 bay leaves
    • 300g potatoes, peeled and sliced
    • 400ml beef stock
    • 2 cloves garlic, minced

    1. Arrange shanks in layers with onions, carrots, celery and turnip in the pressure cooker. Season with salt and pepper to taste. Top with mustard, nutmeg, dill, thyme, rosemary and bay leaves and cover with sliced potatoes.
    2. Pour stock into cooker and sprinkle chopped garlic over all. Close cooker and cook on high heat until valve begins to whistle, then reduce heat to low and simmer for 10 minutes.
