About this recipe: This invigorating raspberry tea sorbet is heavenly on a hot summer day. Serve with fresh raspberries and a little raspberry syrup.


Serves: 1 

  • 400ml water
  • 4 bags raspberry flavoured black tea
  • 3 teaspoons caster sugar or runny honey
  • juice of 1/2 lemon
  • 3 tablespoons raspberry syrup
  • a handful fresh raspberries

  1. Bring 200ml of the water to the boil and add the tea bags. Allow to steep for 8 minutes until strong.
  2. Pour the remaining 200ml water into a saucepan with the sugar and bring to the boil. Mix in the brewed tea then add lemon juice, mix well and pour into a metal container.
  3. Freeze for 3 hours. Stir occasionally during freezing process before it gets solid. Serve with raspberry syrup, honey and fresh raspberries.
