    About this recipe: Green asparagus is an ideal accompaniment for all red meats, and perfect, too, with fish. These are cooked in the oven, savoury and foolproof. Consider this for Christmas dinner or for your Easter menu.

    Serves: 4 

    • 1 bunch asparagus, tough ends trimmed off
    • 1 tablespoon olive oil
    • 2 garlic cloves, chopped
    • salt and black pepper

    1. Preheat the oven to 180 C / Gas 4.
    2. Spread the asparagus over a lightly greased baking tray. Sprinkle with the olive oil, and turn them to be sure that the asparagus is lightly coated with the oil.
    3. Scatter the chopped garlic over the top, and season with salt and pepper. Cover with aluminium foil.
    4. Bake in the preheated oven until tender, about 20 minutes.
