Pizza on ciabatta bread

    Serves: 2 

    • 1 ciabatta bread, cut in half lengthways
    • 2 tomatoes, chopped
    • 100g grated cheese
    • 12 to15 slices salami
    • 2 pickled chilli peppers, chopped
    • freshly ground black pepper, to taste
    • 1/4 teaspoon oregano
    • For the garlic dip
    • 3 tablespoons mayonnaise
    • 2 tablespoons plain yoghurt
    • 3 cloves garlic, minced
    • 3 sprigs chopped fresh parsley
    • salt and pepper, to taste

    1. Preheat the oven to 180 C /Gas 4.
    2. Place the ciabatta halves on a baking tray. Divide the chopped tomatoes between the two halves and spread evenly. Then add half of the cheese, the salami and chilli. Season and sprinkle with oregano, then top with the remaining cheese.
    3. Bake for 10 to 15 minutes until golden brown and cheese bubbles.

    5. Meanwhile, in a small bowl, combine all of the ingredients for the garlic dip and mix well.
    6. Remove the pizza from the oven and serve with the garlic dip.

    This is brilliant. I had ciabatta in the cupboard, the sort you buy which is part-baked and I needed to use it up. The reason this recipe was just right was because I didn't want one where you just toasted the bread. The fact that once you've 'created' the pizza with the topping, you bake this in the oven so it really makes it a great, quick crunchy pizza taste. Will definitely be making again and trying out other toppings.  -  13 May 2016
