Beef goulash with slow cooked flavour is totally possible in little more than an hour, just by using your pressure cooker! This recipe will become a staple in your repertoire.

Ingredients

1 tablespoon olive oil
1.5kg beef shoulder, cut into 2cm cubes
2 large onions, chopped
4 red peppers, sliced
2 (400g) tins chopped tomatoes
500g white mushrooms, sliced
250ml water
1 tablespoon paprika
1 tablespoon dried oregano
1 tablespoon ground cumin
salt and ground black pepper

Heat the olive oil in a pressure cooker over high heat and brown the beef. Remove beef and set aside.
Cook and stir the onions in the pressure cooker until golden, about 5 minutes, then stir in the peppers and tomatoes.
Return the beef to the pressure cooker, and stir in the mushrooms, water, paprika, oregano and cumin. Season generously with salt and pepper. Close the cooker and cook for a total of 1 hour, bringing to pressure over high heat, then setting the heat to low after steam first starts to escape.
Release pressure before opening the cooker. If the sauce is too thick, add a little bit of water. Otherwise, serve immediately.
