Watercress and tofu salad with sesame-soy dressing
Watercress is packed with vitamins and minerals and has a lovely peppery flavour. Combined with protein-laden tofu and a sesame oil, soy sauce and chilli dressing - this salad will become a vegetarian favourite.

2 tablespoons sesame oil
2 tablespoons soy sauce
1/2 teaspoon chilli paste or chilli sauce
150g watercress, torn or chopped
150g firm tofu, sliced into cubes
1 or 2 spring onions, finely chopped

Combine sesame oil, soy sauce and chilli paste in a small bowl to make the salad dressing.
Place watercress and tofu in a salad bowl; toss with dressing; top with finely chopped spring onions and serve.
