Kookoo sabzi (Persian herb frittata)

    The most important ingredient in this easy Persian egg dish, which is similar to a frittata, is a generous amount of mixed fresh herbs. You can serve it with bread and a salad however in Iran it is served with pan fried fish and aromatic rice with herbs and wild orange or lemon.

    Serves: 4 

    • 1 tablespoon plain flour
    • 1 cup mixed minced herbs (parsley, coriander, chives, dill, etc.)
    • 1 egg
    • 1 teaspoon dried barberries (optional)
    • 1 teaspoon chopped walnuts (optional)
    • salt and pepper
    • oil for frying

    1. In a bowl stir flour and herbs. Add egg, barberries and nuts and still till well combined. Salt and pepper.
    2. Add a little oil in a non stick frying pan and heat. Add the entire mixture, like it's done in Iran, or make small frittatas the size of pancakes.
    3. After 2 minutes, reduce the heat and cover with a lid. This allows the frittata to cook more evenly.
    4. Turn the frittata over and fry on the other side till browned. If making one large frittata it might be easier to cut it in four at this point. Serve hot.
