Potato gratin with cod and mushrooms

This is a gratin for a main course: potatoes are boiled then baked with mushrooms and cod fillet topped with cheese.

Ingredients
Serves: 4
- 3 to 4 potatoes
- 1 onion, minced
- 2 tablespoon olive oil
- 200g closed cup chestnut mushrooms, sliced
- 300g fish fillet, cubed
- 3 tablespoons capers
- 2 tablespoons mayonnaise
- 120ml milk
- 100g grated cheese
- salt and pepper to taste

- Cook potatoes unpeeled until tender.
- Preheat oven to 200 C / Gas 6.
- In a frying pan cook onion in olive oil. Add mushrooms and fry for another 5 minutes.
- Cut cooked potato into small cubes. In a bowl combine potatoes with fish, onion, mushrooms and capers. Add salt and pepper and gently stir to combine.
- Place in an ovenproof dish.
- In a small bowl stir 2 tablespoons mayonnaise with milk and pour over potatoes. Sprinkle with grated cheese.
- Bake until browned and bubbly, 35 to 40 minutes.
