There are almost endless possibilities to stuff fresh tomatoes, which are an easy and appetising looking starter. Here the tomatoes are stuffed with fried mushroom and cheese, onion, and capers.

4 large ripe tomatoes
1/2 onion, minced
1 tablespoon butter
100g button mushrooms, minced
150g grated cheese
1 clove of garlic, minced
2 tablespoons capers
black pepper to taste
2 tablespoons mayonnaise

Slice off the top of the tomatoes, about 1/3. Carefully scoop out the flesh, leaving the walls intact. Drain off juice and remove seeds. Cut the flesh in cubes.
Saute minced onion in butter till translucent, then add minced mushrooms and saute for 2 to 3 minutes.
Combine cheese with tomato flesh, mushrooms, onion, garlic, and capers. Add pepper. Add 2 tablespoons of mayonnaise and mix well.
