Rougail saucisse (Reunión Island sausage casserole)
Sausage rougail is a sausage dish from the French island of Reunión in the Indian Ocean. You can use your choice of sausage and cook whole or in pieces. The dish is traditionally served with red beans and rice.

2 cloves garlic
salt and freshly ground black pepper
6 large sausages
oil for cooking
2 onions, chopped
1 green or red pepper, chopped
5 tomatoes, chopped
1 bunch parsley, chopped
1 to 2 sprigs thyme

In a small bowl crush garlic with salt and pepper and set aside.
Bring a large pan of water to the boil; add sausages and cook for 10 minutes; drain.
Meanwhile, heat oil in a large frying pan and sauté onions with garlic mixture, pepper, tomatoes, parsley and thyme. Cover pan, reduce heat to low and let simmer 10 minutes.
When sausages are cooked, brown them in another frying pan then stir into the curry and let simmer another 20 minutes, stirring occasionally.
