Everyone in my family is a proponent of healthy eating, and as a result I have to exercise great care in picking ingredients and recipes. As a rule, aubergine absorbs too much oil when being cooked. This recipe uses no oil, which makes it lighter.
Easy, nutritious and my fussy vegetarian no wheat, no meat friend said it was "really delicious" which is his best comment on food! I substituted grated courgette for the coriander and it was lovely. I will make this again but following the recipe exactly! - 14 Apr 2018
