About this recipe: These delicious vanilla madeleines are easier to make than you might think and produce a delicate and delicious result.


Makes: 18 madeleines

  • 2 eggs
  • 100g caster sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest
  • 125g plain flour
  • 120g butter, melted

  1. Preheat oven to 200 C / Gas 6. Lightly grease and flour an 18 mould madeleine baking tin.
  2. In a bowl, beat together the eggs and sugar until pale and frothy. The mixture should increase in volume. Add vanilla extract and lemon zest followed by the flour then mix well. Add the melted butter and mix until well incorporated. Carefully spoon into the prepared madeleine tin.
  3. Bake in the preheated oven for 10 minutes or until golden brown. Remove from the oven and allow to cool before enjoying.
