St. Patrick's Day whoopie pies

    Serves: 12 

    • For the biscuits
    • 150g butter, softened
    • 150g caster sugar
    • 1 egg, lightly beaten
    • 1 lime, zested
    • 100ml milk
    • green food colouring
    • 220g plain flour
    • 2 teaspoon baking powder
    • For the filling
    • 200g icing sugar
    • 300g mascarpone
    • 1 tablespoon lime juice

    1. Preheat the oven to 180 C / Gas 4.
    2. Beat the butter and caster sugar together until light and creamy in a large bowl. Add the beaten egg, lime zest and milk, then the food colouring.
    3. Sift the flour and baking powder together and stir into the butter mixture. Drop small mounds of the mixture onto a non greased baking tray.
    4. Bake in the preheated oven until the edges are lightly golden, 8 to 10 minutes. Let the biscuits cool for 5 minutes on the baking tray, then transfer to a wire rack to cool completely.
    5. To make the cream filling, beat the icing sugar with the mascarpone and the lime juice. Spread a little filling on one biscuit, then cover with another biscuit. Chill till serving.
