Deliciously moist, this apple cake is embellished with a touch of ground almonds, adding moisture and texture. For more almond flavour you can sprinkle flaked almonds over top before baking.

125g caster sugar
125g plain flour
30g ground almonds
1 teaspoon baking powder
1 teaspoon ground cinnamon
60g butter, melted
2 apples - peeled, cored and chopped

Preheat the oven to 180 C / Gas 4. Grease a 20cm round cake tin.
Whisk the eggs with the caster sugar until smooth. Stir in the plain flour, ground almonds, baking powder, cinnamon and melted butter. Stir in the apples. Pour the cake mixture into the prepared cake tin.
Bake in the preheated oven until a skewer inserted near the centre comes out clean, about 25 minutes.
