Fatayer (Lebanese spinach pie)

    Fatayer are small savoury Middle Eastern pies that can be filled with mince meat or spinach. This recipe is with a spinach and goats cheese filing.

    Serves: 4 

    • For the pastry dough
    • 1 teaspoon dried active yeast
    • 150ml water
    • 250g plain flour
    • 2 tablespoons oil
    • 1 pinch salt
    • For the filling
    • 400g fresh spinach
    • 1/2 lemon, juiced
    • 50ml olive oil
    • 150g goats cheese
    • 1 teaspoon sumac
    • salt and pepper
    • 1 onion, minced
    • oil for frying

    1. For the pastry dough dilute yeast in water and add to a bowl with flour, water, salt and oil. Mix till smooth. Cover and let to rise in a warm place.
    2. For the filling wash spinach well. Bring water to the boil in a large pot and blanch spinach for 1 minute. Drain and let cool, then chop.
    3. In a bowl mix spinach with lemon juice, olive oil, goats cheese and sumac. Season to taste with salt and pepper. Fry onion in a little oil till translucent.
    4. Roll out the pastry, then cut out rounds of 8cm in diam├Ętre. Place 1 teaspoon filling in the centre of each round and fold them over to form triangles/pyramid shapes. Pinch the sides together with your fingertips to seal.
    5. Place on a baking tray lined with greaseproof paper. Bake in the preheated oven at 180 C / Gas 4 till lightly browned, about 20 minutes.
