Raspberry and white chocolate tart

    I love this tart. Light yet completely decadent! Great flavour with the raspberries and mascarpone cheese. I've also done this with blueberries, and again it is completely yummy!

    Serves: 8 

    • 450g mascarpone cheese
    • 90g caster sugar
    • 90g ground almonds
    • 2 eggs
    • 200g fresh or frozen raspberries
    • 90g white chocolate, chopped
    • 1 sweet shortcrust pastry case

    Prep:10min  ›  Cook:25min  ›  Extra time:1hr cooling  ›  Ready in:1hr35min 

    1. Preheat oven to 140 C / Gas 1.
    2. Whisk together the mascarpone, sugar, almonds and eggs until well blended. The fold in the raspberries and chocolate. Pour into the pastry case.
    3. Bake in the preheated oven until just set and lightly golden, about 25 minutes.
    4. Allow to cool slowly for at least an hour before cutting into slices. Best served chilled.

    I have been doing it on a regular basis. A smash each time! To give it a little kick, I made a white chocolate, rhum and chopped praline sauce for topping! Really delicious and easy.  -  17 Sep 2013
