Peach and strawberry summer tart

    This is a great recipe to have, as it can be made out of storecupboard ingredients and takes just minutes to prepare. Never be caught out by unexpected guests! Serve this warm with ice cream, or slice when cool and serve with cream. Enjoy!

    • 1 sweet shortcrust pastry case
    • 1 small tin peaches
    • 100g fresh strawberries or 1 small tin strawberries
    • 50 to 75g marzipan
    • 1 tablespoon caster sugar, or as needed

    1. Preheat the oven to 200 C / Gas 6.
    2. Roll out a layer of marzipan about 3-4mm thick and lay on top of the pastry case. Arrange the peaches and strawberries on top of the marzipan layer. Sprinkle on a little sugar.
    3. Bake until the marzipan layer bubbles, about 25 minutes.


    You can use almost any tinned fruit for this - pears work great. You can also use up any fruit laying around. Slice a pear, apple or banana instead of tinned fruit, and you're good to go!
