Ingredients
Makes: 16 macaroons
1 egg white
1 pinch salt
200g desiccated coconut
200g condensed milk
2 tablespoons plain flour
1 teaspoon vanilla extract
125g icing sugar
1 tablespoon lemon juice

Preheat oven to 170 C / Gas 3. Line a baking tray with baking parchment.
In a bowl whisk the egg white and salt until stiff peaks form. Set aside.
In a separate bowl, combine the coconut and condensed milk and mix. Add the flour and stir until well incorporated.
Carefully fold egg whites into the coconut mixture and add the vanilla extract. Spoon the mixture onto the prepared baking tray as small mounds, do not press them down.
Bake for 25 minutes until firm and golden brown. Remove from the oven and let cool a little.
Meanwhile, make the drizzle by mixing together the icing sugar and lemon, then drizzle over the macaroons. Allow the glaze to set and the macaroons to cool completely before serving.
