Peel the beetroot and slice into rounds.
In a bowl, mash the goat's cheese with fork, add the rosemary and olive oil and mix well.
Assemble the individual stacks – the number of layers is up to you – top a beet slice with cheese mixture, then another slice, and so on for 3 to 4 layers. Serve with a little garnish on the side for full effect.
