Beetroot and goat's cheese stacks

    Beetroot and goat's cheese combine in this attractive and vibrant dish, ideal as a fancy vegetarian starter.

    Serves: 4 

    • 2 cooked beetroots
    • 150g goat's cheese
    • 1/4 teaspoon rosemary
    • 1 teaspoon olive oil

    1. Peel the beetroot and slice into rounds.
    2. In a bowl, mash the goat's cheese with fork, add the rosemary and olive oil and mix well.
    3. Assemble the individual stacks – the number of layers is up to you – top a beet slice with cheese mixture, then another slice, and so on for 3 to 4 layers. Serve with a little garnish on the side for full effect.
