    About this recipe: This starter makes for a very interesting combination of flavours; everybody always raves about it. Garnish with fresh parsley and serve.

    Serves: 12 

    • 6 hard boiled eggs
    • 2 tablespoons mayonnaise
    • 1 teaspoon prepared mustard
    • 1 tin tuna, drained
    • 1 bunch chopped chives or dill
    • salt and pepper, to taste
    • fresh parsley, to garnish

    1. Cut the eggs in half lengthways. Remove the egg yolks and place in a bowl. Mash the yolks with a fork until crumbly then mix in 1 tablespoon mayonnaise and 1 teaspoon mustard, mix until smooth. Stir in the tuna and chopped chives, mix well. Season with salt and pepper.
    2. Spoon the mixture into the egg whites. Garnish with the remainder of the mayonnaise and the parsley.
