Oatmeal cookies with nuts and raisins

    Spruce up a picnic or your daily lunchbox with these moist and chewy oatmeal cookies with nuts and raisins.

    Makes: 25 oatmeal cookies

    • 200g unsalted butter
    • 500g rolled oats
    • 100g brown cane sugar
    • 50g raisins
    • 3 tablespoons desiccated coconut
    • 50g walnuts, chopped
    • 50g almonds, chopped
    • 2 eggs, lightly beaten

    1. Preheat the oven to 190 C / Gas 5. Grease a baking tray.
    2. Melt the butter in a saucepan over medium heat. Stir in the oats and cook for 5 minutes. Remove from the heat and allow to cool slightly.
    3. Mix in the sugar, raisins, coconut and nuts. Add the eggs and stir until well combined.
    4. Shape into cookie sized balls or mounds and place on the prepared baking tray (wet hands will help with this process).
    5. Bake for 15 minutes until golden brown. Remove from the oven and allow to cool on wire rack.

    Nice crumbly cookie, ideal with a cup of tea. Easy but messy to make. Used a packet of muesli instead of oats and just added some desiccated coconut.  -  19 Sep 2016
