Smoked salmon and vegetable quiche

    This smoked salmon and vegetable quiche is hearty and filling with a nice combination of ingredients. Serve warm with a baked potato and salad.

    Serves: 8 

    • For the pastry
    • 100g unsalted butter
    • 125g plain flour
    • 1 egg
    • 1 pinch salt
    • 1 dash lemon juice
    • For the filling
    • 80ml milk
    • 80ml double cream
    • 4 eggs
    • 100g crumbled feta cheese
    • 4 broccoli florets, chopped
    • 1/4 onion, chopped
    • 3 cloves garlic, chopped
    • 1/2 red pepper, chopped
    • 1/2 yellow pepper, chopped
    • 100g smoked salmon, cut into small pieces
    • salt and pepper, to taste

      For the pastry:

    1. In a mixing bowl, rub the butter into the flour until the mixture resembles fine breadcrumbs. Mix in the egg, salt and lemon juice and knead until a dough forms. Wrap in cling film and chill in the fridge for 1 hour.
    2. Preheat the oven to 190 C / Gas 5. Grease a quiche dish.

    4. Meanwhile, in a bowl combine the milk, cream and eggs and beat well. Add the feta followed by the vegetables and the salmon. Season.
    5. Remove the pastry from the fridge and roll out on a floured surface. Transfer to the prepared quiche dish and press gently into the base and sides to line. Pour in the filling.
    6. Bake for 1 hour until the filling is firm and the pastry is golden brown.
