Apple and flaked almond muffins

    This muffin mixture has no salt in it. It's also quite healthy as well, made with a minimum of butter, fresh apple and flaked almonds.

    Serves: 10 

    • 255g (9oz) plain flour
    • 2 1/2 teaspoons baking powder
    • 100g (4oz) caster sugar
    • 60g unsalted butter
    • 225ml (8 fl oz) semi-skimmed milk
    • 1 (110g) (4oz) apple - peeled, cored and chopped
    • 30g flaked almonds

    1. Preheat oven to 200 C / Gas 6. Lightly grease a 12-cup muffin tin, or line with paper cupcake cases.
    2. In a large bowl, sift together the flour and baking powder.
    3. In a separate bowl, cream together sugar and butter. Stir the flour mixture into the sugar mixture alternately with the milk.
    4. Fold in the fruit and flaked almonds. Pour batter into prepared muffin tin or muffins cases. Sprinkle some flaked almonds on the tops of the muffins.
    5. Bake in preheated oven until the muffins spring back when you touch them, about 20 minutes.
