    About this recipe: It is easy to make tasty and succulent pork escalopes at home with this simple recipe. Juicy pork loin is sliced and topped with mushrooms and cheese to give a pleasing result ideal for an easy supper.

    Ingredients
    Serves: 4 

    • 600g boneless pork loin
    • salt and pepper, to taste
    • 1 tablespoon unsalted butter
    • 400g mushrooms, chopped
    • 1 onion, chopped
    • 100g grated cheese
    • 4 teaspoons mayonnaise
    • 4 tablespoons spicy ketchup
    • chopped fresh parsley or chives, to garnish

    Method

    1. Preheat the oven to 180 C / Gas 4.
    2. Cut the pork loin into 2.5cm thick slices. Pound gently with a meat hammer then sprinkle with salt and pepper.
    3. In a saucepan, melt the butter and cook and stir the mushrooms until golden brown.
    4. Arrange the pork escalopes in a baking dish then add a layer of onion, mushrooms and cheese to each escalope. Spread mayonnaise and ketchup on each one.
    5. Bake for 1 hour until the pork is no longer pink in the centre and the cheese is golden brown. Remove from the oven and garnish with parsley or chives before serving.

    This is such an easy dish and much of it can be prepared in advance and kept in the fridge. I misread the recipe and cut the pork escalopes that I had bought (not a loin as per the recipe) into strips. No problem! I just laid them in the dish and covered them as instructed.
