Broccoli and chicken bake

    This broccoli and chicken bake is a fantastic option for a mid week supper and is tasty and nourishing to boot.

    Serves: 8 

    • 1 head broccoli
    • 2 chicken breast fillets
    • 10 tablespoons olive oil
    • salt and pepper, to taste
    • herbes de Provence to taste
    • 3 tomatoes, sliced
    • 100g grated cheese
    • chopped fresh dill, to taste
    • chopped fresh basil, to taste

    1. Preheat the oven to 180 C / Gas 4. Grease a baking dish.
    2. Cook broccoli in a saucepan of boiling water for 5 minutes until tender. Break into florets and set aside.
    3. In a frying pan, heat 4 tablespoons olive oil and brown the chicken on all sides, seasoning with herbes de Provence, salt and pepper.
    4. In the base of the baking dish, arrange a layer of broccoli and on top of that a layer of chicken, then add a second broccoli layer and cover with tomato slices. Sprinkle each layer with salt, dill and basil.
    5. Drizzle with the remaining olive oil, sprinkle with cheese.
    6. Bake for 15 to 20 minutes until the cheese melts and is golden brown. Remove from the oven and serve.
