Mozzarella aubergine starter

    Mozzarella and aubergine is a great combination and this recipe is wonderful served as a starter; a real Mediterranean treat.

    Serves: 4 

    • 1 aubergine, sliced into 1.5cm rounds
    • 1 tablespoon salt
    • 150g mozzarella cheese, sliced
    • 1 tomato, sliced
    • freshly ground black pepper, to taste

    1. Preheat the oven to 180 C / Gas 4. Grease a baking tray.
    2. Sprinkle the aubergine slices with the salt then set aside for 20 minutes. Rinse the aubergine and pat dry.
    3. Arrange the aubergine in a single layer on the baking tray then alternate placing a slice of tomato followed by a slice of cheese with a slice of cheese followed by a slice of tomato on each round. Sprinkle with black pepper.
    4. Bake for 10 minutes until the cheese bubbles. Remove from the oven and serve.
