Preheat the oven to 180 C / Gas 4. Grease a baking tray.
Sprinkle the aubergine slices with the salt then set aside for 20 minutes. Rinse the aubergine and pat dry.
Arrange the aubergine in a single layer on the baking tray then alternate placing a slice of tomato followed by a slice of cheese with a slice of cheese followed by a slice of tomato on each round. Sprinkle with black pepper.
Bake for 10 minutes until the cheese bubbles. Remove from the oven and serve.
