Courgette and mozzarella cheese come together for this flavourful and filling vegetarian side dish, great as part of a larger meal.

2 (125g) balls mozzarella cheese, sliced
chopped fresh basil, to garnish

Preheat the barbecue to a medium heat.
In a bowl, combine the olive oil, herbes de Provence and seasoning and mix well. Brush the sliced courgette on both sides with the mixture then place on the barbecue. Cook for 5 minutes and then flip over and top the slices with the mozzarella cheese. Sprinkle with basil and barbecue for a further 6 to 10 minutes until the cheese melts.
For a nice variation, try sprinkling some sun dried tomatoes onto the mozzarella.
