This barbecued root parsley, also known as Hamburg parsley, is a flavourful side dish to so many meals. It is very versatile and can also be roasted, boiled or puréed. Best used in dishes where root vegetables are featured.

6 root parsley, peeled and halved lengthways
salt and pepper, to taste
3 tablespoons unsalted butter
1 teaspoon runny honey
1 teaspoon paprika
1 tablespoon chopped fresh dill

Place the parsley root halves on tin foil or on a tray. Sprinkle with salt and pepper.
In a saucepan, melt the butter then stir in the honey, paprika and dill. Mix well and pour over the parsley roots.
Barbecue for 15 to 20 minutes, turning occasionally, until golden brown and soft. Remove from the heat and serve.
Root parsley may not be available in your local shops. Try looking and asking around at farmers' markets and in farm shops during the months of late August through November when they are in season.
