About this recipe: Cosy up to a mug of the classic masala chai. Use loose-leaf black tea, such as Darjeeling, and full-fat milk for best results.


Serves: 2 

  • 200ml water
  • 2 tablespoons good quality black tea (or 4 tea bags)
  • 5 teaspoons caster sugar or honey
  • 1/2 teaspoon cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 3-4 cloves
  • 1/2 teaspoon cardamom
  • 1 pinch ground black pepper
  • 200ml full-fat milk

  1. In a saucepan, combine 200ml water, tea, sugar and spices. Bring to the boil and simmer for 2 minutes.
  2. Pour in milk and bring back to the boil. Remove from the heat, strain and pour into cups. Serve immediately.
