Wholemeal parathas

    Parathas, traditional Indian flatbreads to accompany Indian dishes, are delicious both filled and plain. Here's a basic recipe to serve with your favourite curry.

    Serves: 4 

    • 100g wholemeal flour
    • 20g plain flour
    • 1/2 teaspoon salt
    • water, as needed
    • oil

    1. Whisk together the wholemeal flour, plain flour and salt in a bowl. Stir in just enough water to make a soft, smooth dough, and knead for a few minutes on a lightly floured work surface.
    2. Divide the dough into about a dozen equal parts, and shape each into a small ball. Roll each ball into a very thin circle with a rolling pin.
    3. Brush one side of each circle with oil, and fold in half. Brush the top with oil, and fold in half again. Brush with oil and fold again, then roll each paratha out very thinly into a circle.
    4. Heat a large frying pan over medium high heat. Place one of the parathas into the frying pan. When it begins to swell, brush the top with oil. Turn over to cook on the other side, and brush again with oil. Keep warm and repeat with remaining dough.

    Made a nice change from naan bread or chapatis. Not easy rolling out the second time and achieving circular bread, probably need more practice!  -  12 Feb 2016
