Best ever egg and mushroom on toast

    I make this on a Sunday morning as an alternative to a fry-up and the whole family love it. Mushrooms are layered over peppery eggs on toast.

    Serves: 4 

    • 8 slices bread
    • 1 tablespoon oil
    • 500g mushrooms, chopped
    • 6 eggs
    • 1 teaspoon milk
    • 1 teaspoon pepper

    1. Toast all the slices of bread, to your taste.
    2. Put the oil in a frying pan on a medium heat, and gently fry the mushrooms until they are browned.
    3. Meanwhile, in a jug beat the eggs and milk together, then add the pepper. Put the jug in microwave and cook on High until all liquid has disappeared, 3 to 4 minutes.
    4. When everything is cooked, layer up on a plate - toast, then eggs and mushrooms.
    5. Enjoy


    Sometimes I add a little cheese on top of the lot. Also if you don't like pepper just omit it. Also if you can't have milk just don't put it in - it just fluffs up the eggs.

    This was surprisingly good, I have to say. I didn't expect it to be this comforting as English breakfasts tend to me quite minimalist and not very exciting and this recipe is minimalist but it certainly was tasty. I didn't cook the eggs in the microwave. I did it the old fashioned way on a skillet where I had control of how soft it was, which is the way I like it. I've tried it with shredded cheese on top of the mushrooms and I did it also with sliced cheese on top of the toast, then the eggs, then the mushrooms. Both were tasty but I think I prefer the shredded cheese on top. All in all a very simple yet tasty recipe. Highly recommended.  -  11 Feb 2014
