Easy special fairy cakes

    I have been making these cakes to this recipe since I was about 5 and they have almost never failed me . . . and they are a real tasty crowd pleaser and can be a really special present for someone you care about.

    Makes: 12 cakes

    • 110g (4oz) margarine
    • 110g (4oz) caster sugar
    • 2 eggs
    • 1 teaspoon vanilla extract
    • 110g (4oz) self-raising flour
    • 1 teaspoon baking powder

    Prep:15min  ›  Cook:20min  ›  Extra time:20min cooling  ›  Ready in:55min 

    1. Preheat the oven to 180 C / Gas 4. Line a cupcake tin with cupcake cases.
    2. Mix the margarine and caster sugar together until pale and fluffy with an electric mixer. Add in the eggs and vanilla and mix carefully.
    3. Sift the flour and baking powder together and fold into the mixture, then mix with the mixer for about 1 minute. Fill the cupcake cases half full.
    4. Bake in the preheated oven until the cakes are risen and firm on the top, about 20 minutes.

    Other ideas

    If you want to make chocolate ones, take 1oz of self-raising flour away and put in 1oz cocoa powder instead.
