Preheat the oven to 200 C / Gas 6. Pour 1 tablespoon of the olive oil into a baking tray.
Place the sole fillets onto the baking tray. Season with salt and pepper. Sprinkle the shallots evenly over the fish, and place the tomato slices on top. Sprinkle with the lemon juice and the remaining tablespoon of olive oil.
Bake in the preheated oven until the fish flakes easily with a fork, about 15 minutes. Garnish with lemon slices and serve.
