Baked sole fillets with shallot and tomato

    An easy and elegant way to prepare sole, baked to perfection with Mediterranean flavours of tomatoes, shallots, olive oil and lemon. A sprinkle of freshly chopped parsley before serving is great, too.

    Ingredients
    Serves: 4 

    • 2 tablespoons olive oil
    • 4 to 6 fillets of sole
    • salt and ground black pepper
    • 2 shallots, minced
    • 4 tomatoes, sliced into rounds
    • 1 lemon, juiced
    • 1 lemon, sliced

    Method

    1. Preheat the oven to 200 C / Gas 6. Pour 1 tablespoon of the olive oil into a baking tray.
    2. Place the sole fillets onto the baking tray. Season with salt and pepper. Sprinkle the shallots evenly over the fish, and place the tomato slices on top. Sprinkle with the lemon juice and the remaining tablespoon of olive oil.
    3. Bake in the preheated oven until the fish flakes easily with a fork, about 15 minutes. Garnish with lemon slices and serve.
