Asparagus in puff pastry

    This is a fantastic recipe for asparagus wrapped in puff pastry; a perfect party finger food great for cocktail parties or garden parties.

    Makes: 12 asparagus in puff pastry

    • 12 white asparagus spears
    • salt, to taste
    • 1 packet puff pastry
    • 12 slices cheese
    • 2 tablespoons chopped dill

    1. Preheat the oven to 200 C / Gas 6. Line a baking tray with baking parchment.
    2. Wash, trim and peel the asparagus. Bring a large saucepan of water to the boil, adding a little salt, then add the asparagus and cook for 10 minutes (until tender) then drain.
    3. Roll out the pastry and cut into 12 rectangles. Prick each rectangle with a fork and sprinkle with salt and dill. Lay a slice of cheese on each rectangle.
    4. Place one asparagus spear on each rectangle. Roll it up in the pastry and transfer to the prepared baking tray.
    5. Bake for 15 to 20 minutes until golden brown. Remove from the oven and serve warm or cold.


    If white asparagus is unavailable, substitute for fresh green asparagus.
