About this recipe: I thought of these after having Simnel cake at a friend's, and loving the combination of fruit and marzipan. Very easy and quick to make, they look and taste great!

Serves: 12 

  • 200g sultanas
  • 4 tablespoons lemon juice
  • 3 tablespoons apricot jam or lemon curd (optional)
  • 375g puff pastry
  • 200g marzipan
  • icing sugar

  1. Preheat the oven to 190 C / Gas 5.
  2. Mix the sultanas with the lemon juice and apricot jam or lemon curd, if using. Set aside.
  3. Roll the puff pastry out. You can either do this as one sheet for a large tart, or cut into 4cm squares to make individual tarts. Score the pastry along the edges, about 1-2cm inside the edge.
  4. Fill inside the scored marks with a layer of marzipan. Spoon the fruit mixture over.
  5. Bake in the preheated oven until puffed and golden brown, about 15 minutes. Allow to cool and sprinkle with icing sugar to serve.
