This barbecued salmon on a cedar plank is a great way to cook salmon and a great way to infuse the beautiful flavours of the cedar into the fish. Soak the planks in water prior to cooking.

2 tablespoons brown sugar
2 tablespoons olive oil
600g salmon fillet, with skin
1 lemon, sliced
2 to 3 sprigs fresh dill
1 teaspoon freshly ground black pepper

Preheat the barbecue to a medium heat.
In a small bowl, combine the brown sugar with olive oil. Brush the salmon with the mixture then arrange the lemon slices and dill sprigs on top. Season with pepper.
Place the cedar plank on the barbecue and warm it up for 5 to 6 minutes. Turn over then brush with olive oil and place the fish skin down. Using the barbecue lid, cover and cook for 20 to 30 minutes until the fish is an even pink colour throughout and the flesh flakes easily with a fork. Remove from the heat and serve.
Soak the cedar plank in water for at least 4 hours prior to starting (best if soaked overnight).
