This is a delicious dish made of peppers and springy mushrooms, stir fried with garlic and dill.

2 cloves of garlic
1 bunch dill
250g shiitake mushrooms
3 to 4 tablespoons oil

Remove seeds from the peppers and cut into julienne strips. Chop garlic. Mince dill.
Remove the mushroom stems (they are tough and not palatable). Slice the caps across.
Heat olive oil in a pan. Add peppers and mushrooms and cook on medium heat, constantly stirring. You can cover the pan, shiitakes release very little juice, and they will brown nicely even if they’re covered.
When almost done, add garlic and dill. Remove the cover and cook on high heat for a minute.
