Crispy garlic calamari rings

    Fried calamari rings flavoured with garlic are a lovely starter if you're expecting a crowd!

    Ingredients
    Serves: 4 

    • oil for frying
    • 500g raw squid rings
    • 3 cloves of garlic, crushed
    • salt and pepper to taste
    • 4 tablespoons flour, or as needed for dredging

    Method

    1. Preheat oil in a heavy, deep frying pan or pot. Oil should be heated to 180 C.
    2. Place squid rings in a colander or large bowl. Season with salt, pepper and garlic. Sprinkle flour on top and toss well to try and cover all of the squid with flour.
    3. Fry the squid rings for 2-3 minutes or until lightly brown. Try not to overcook the squid, otherwise it will be very chewy. Drain on kitchen paper and serve with lemon wedges.
